My tummy is full and happy. Tonight's dinner was an all-around crowd-pleaser, with an enthusiastic thumbs-up from everyone, including both kids and the grandpapa.

I was a little concerned when I realized, halfway through making dinner, that this recipe is supposed to serve only four, and there are five of us. So I cooked up about 3/4 of a pound of pasta, instead of just a half-pound, keeping my fingers crossed that there would be enough pesto for this to work. As it turns out, there was no need for me to worry: the recipe for the edamame pesto made plenty, and by the time it was all mixed up with the pasta and sauteed mushrooms, there was plenty of pasta for everyone.

I can tell you right now that I'll be making this pesto again, and not just for smothering pasta. I'm dreaming about using it on steamed veggies, stirring spoonfuls into soups, spreading it onto sandwiches...

Upside-Down Lentil Shepherd's Pie

First, I want to say thank you to everyone who is stopping by for a visit here. This project is only two weeks old, and already I can feel your support. So, thank you!

Also, I wanted to give a little update on my progress in the weight-loss department. I'm down about 3 more pounds over the last two weeks. Yay me! Since the end of January, however, I've lost a total of about 13 pounds, so there's definitely a downward trend here.

I've been getting better at getting regular exercise and workouts in. I think I'm feeling a little more muscle tone here and there, and it's not my imagination. The dog and I are getting in some good walks together. I've been kicking my own butt doing cardio-strength drills with the Nike Training Club app. But food-wise, I need to focus a little more on Fuhrman's "basic skeleton plan" (fruit for breakfast, salad topped with beans for lunch, and more salad plus cooked vegetables along with the cup of whole grains/starchy vegetable for dinner), and make sure I'm fitting the AFR recipes into that framework, as much as possible. And I just need to remember to be patient with myself. It'll happen; I'll reach my goals.

Isa, you win: I ate the mushrooms, and I liked it.

I mentioned already that I'm not really a fan of mushrooms, but somehow this worked for me. Was it the variety (shitake - not cheap, by the way)? Was it the way they were chopped up (pretty small - I was scared of ending up with big chunks)? Or was it the delicious combination of the other vegetables, spices, and seasonings (the Worcestershire here definitely gave it that "somethin' somethin'"), lusciously ladled over the cauliflower mashed potatoes?

I don't know. But I liked it, and I'd eat this again. Even with the mushrooms. Who am I?!??

Let me be upfront: I am not a fan of mushrooms. But El Hombre is! And I made this tonight to show him some mushroom-y love. He would eat them every day for every meal if I would just cook the darn things. I've tried to like them, I really have. I wish I did. I think it would make my life a little easier, especially as a vegan.

But back to the Garlicky Mushrooms & Kale! El Hombre thought it was great. Kale, garlic, mushrooms... in his eyes, what's not to love? Especially when it's finished off with a hearty drizzle of Sriracha sauce.

In the spirit of being open-minded, I tried a few bites with the mushrooms. And it wasn't bad. The garlic and kale had enough flavor on their own to mask the flavor of the mushrooms for me. But the texture of the mushrooms.... again, not a fan. I ended up giving away my share of the mushrooms to El Hombre, who happily took them off my hands. He's happy, I'm happy, it's a win-win.

We eat cooked greens a lot. I've cooked them like this before, but maybe not with quite so much garlic. But it was delicious, and heck, next time, I'll probably use even more garlic.
